Ingredients

- 4 ripe peaches
- 4 ounces goat cheese
- 2 tablespoons honey
- 1 tablespoon fresh mint, chopped
- 1 teaspoon fresh thyme, chopped
- 1 tablespoon olive oil
- salt to taste
Instructions
- Preheat the grill to medium heat.
- Cut the peaches in half and remove the pits.
- Brush the cut sides of the peaches with olive oil.
- Place the peaches cut-side down on the grill and cook for about 4-5 minutes until grill marks appear.
- Turn the peaches over and fill each half with goat cheese.
- Cover and grill for another 3-4 minutes until the cheese is warm.
- In a small bowl, mix honey, mint, and thyme.
- Remove the peaches from the grill and drizzle with the mint thyme honey before serving.

- Serve warm for the best flavor.
