- 1 pound chicken breast, diced
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons dried oregano
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, combine diced chicken, olive oil, oregano, salt, and pepper. Marinate for 30 minutes.
- Cook the marinated chicken in a skillet over medium heat until fully cooked.
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Add the cooked chicken to the bowl and mix well.
- Drizzle with red wine vinegar and toss to combine.
- Serve in bowls and enjoy!
