- 2 slices sweet potato
- 2 hard-boiled eggs
- 1 tablespoon mayonnaise
- 1 teaspoon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch thick slices.
- Arrange the sweet potato slices on a baking sheet and bake for 20-25 minutes or until tender.
- While the sweet potatoes are baking, peel and grate the hard-boiled eggs.
- In a bowl, mix the grated eggs with mayonnaise, mustard, salt, and pepper.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Top each slice of sweet potato with the grated egg mixture.
- Serve immediately and enjoy your healthy breakfast!
