- 2 pounds ripe tomatoes
- 4 strips turkey bacon
- 1 medium onion
- 3 cloves garlic
- 4 cups chicken broth
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- Cut tomatoes in half and place them on a baking sheet.
- In a pan, cook the turkey bacon until crispy, then set aside.
- Add chopped onion and garlic to the bacon grease and sauté until soft.
- Roast tomatoes in the oven for 30 minutes.
- Combine roasted tomatoes, chicken broth, sautéed onion, garlic, sugar, salt, and pepper in a pot.
- Simmer for 15 minutes, then blend until smooth.
- Stir in heavy cream and garnish with crumbled turkey bacon.
Notes
- For a thicker soup, reduce the quantity of chicken broth.
- Feel free to add herbs like basil or thyme for additional flavor.
