Gluten Free Pasta Salad: Easy and Delicious with Turkey Bacon

Ingredients

  • 8 ounces gluten-free pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook gluten-free pasta according to package instructions. Drain and rinse under cold water.
  2. In a pan, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine pasta, cherry tomatoes, cucumbers, red onion, parsley, and crumbled bacon.
  4. In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, consider adding feta cheese or olives.
  • Adjust the dressing to taste.
