- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/3 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 3 tablespoons eggnog
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, beat the butter and brown sugar until light and fluffy.
- Add molasses, egg, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop dough by tablespoonfuls onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until lightly browned.
- Let cookies cool completely before frosting.
- To make the frosting, mix powdered sugar and eggnog until smooth.
- Spread frosting on half of the cookies and sandwich with the other half.
Notes
- For a spicier cookie, increase the amount of ginger or add a pinch of cayenne pepper.
- Letting the cookies sit overnight helps enhance the flavors.
