- 4 slices turkey bacon
- 1 pound beef chuck, cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 4 cups beef broth
- 2 large carrots, sliced
- 2 large potatoes, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, brown the cubed beef on all sides.
- Add the onion and garlic, and sauté until softened.
- Stir in the tomato paste and paprika, cooking for a minute.
- Add the beef broth, carrots, and potatoes. Season with salt and pepper.
- Bring to a simmer, cover, and cook for about 1.5 hours until beef is tender.
- Stir in the crispy turkey bacon before serving.
Notes
- For added flavor, consider using smoked paprika.
- Serve with crusty bread for a complete meal.
