Ingredients

  • 4 chicken breasts
  • 1 pound baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with half of the olive oil and seasonings.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. In the same bowl, toss the chicken breasts with the remaining olive oil, garlic, and seasonings.
  5. Place the chicken on the baking sheet with the potatoes.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  7. Sprinkle the Parmesan cheese on top and return to the oven for an additional 5 minutes.
  8. Remove from the oven and let rest for a few minutes before serving.

  • Serve with a side salad for a complete meal.
  • Leftover chicken and potatoes can be reheated in the oven.
