- 4 chicken breasts
- 1 pound baby potatoes
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with half of the olive oil and seasonings.
- Spread the potatoes on a baking sheet in a single layer.
- In the same bowl, toss the chicken breasts with the remaining olive oil, garlic, and seasonings.
- Place the chicken on the baking sheet with the potatoes.
- Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
- Sprinkle the Parmesan cheese on top and return to the oven for an additional 5 minutes.
- Remove from the oven and let rest for a few minutes before serving.
Notes
- Serve with a side salad for a complete meal.
- Leftover chicken and potatoes can be reheated in the oven.
