- 2 ripe bananas
- 1/2 cup cream cheese, softened
- 1/2 cup sugar
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas and then mix in the cream cheese until smooth.
- Add the sugar, melted butter, eggs, and vanilla extract into the banana mixture and mix well.
- In another bowl, combine the baking soda, baking powder, salt, and flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased muffin tin, filling each muffin cup about ¾ full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- For best results, use very ripe bananas.
- These muffins freeze well; store in an airtight container.
