- 4 chicken thighs
- 2 cups sliced mushrooms
- 1 cup diced onions
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the chicken thighs on both sides.
- Add the onions, garlic, and mushrooms; sauté until tender.
- Stir in the chicken broth, heavy cream, Dijon mustard, thyme, parsley, salt, and pepper.
- Transfer the mixture to a baking dish and cover it with aluminum foil.
- Bake for 45 minutes, removing the foil for the last 15 minutes to brown the chicken.
