Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the chicken thighs on both sides.
  3. Add the onions, garlic, and mushrooms; sauté until tender.
  4. Stir in the chicken broth, heavy cream, Dijon mustard, thyme, parsley, salt, and pepper.
  5. Transfer the mixture to a baking dish and cover it with aluminum foil.
  6. Bake for 45 minutes, removing the foil for the last 15 minutes to brown the chicken.
