- 8 ounces pasta of your choice
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/3 cup Italian dressing
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- In a skillet, cook the turkey bacon until crispy, then crumble it into pieces.
- In a large bowl, combine cooled pasta, turkey bacon, cherry tomatoes, cucumber, red onion, and parsley.
- Drizzle with Italian dressing, then season with salt and pepper. Toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made a day ahead of time for the flavors to meld.
- Feel free to add your favorite vegetables.
