- 1 cup all-purpose flour

- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 4 ounces cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- In another bowl, mix the sugars, oil, eggs, and pumpkin until combined.
- Gradually add the dry ingredients to the wet ingredients until just mixed.
- Spoon half of the batter into the muffin cups. Add a dollop of cream cheese on top, then cover with the remaining batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra flavor, consider adding chocolate chips or nuts.
- Make sure to use pure pumpkin puree, not pumpkin pie filling for accurate flavor.
