- 2 English muffins
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Split the English muffins in half and place them on a baking sheet.
- Spread marinara sauce on each half.
- Sprinkle mozzarella cheese on top of the sauce.
- In a bowl, whisk the eggs with Italian seasoning, salt, and pepper. Pour the mixture evenly over the cheese.
- Top with diced bell peppers and green onions.
- Bake for 12-15 minutes, or until the eggs are set.
- Serve warm and enjoy!
