Ingredients

- 1 turkey carcass
- 2 liters water
- 1 onion, quartered
- 2 carrots, cut into chunks
- 2 celery stalks, cut into chunks
- 3 garlic cloves, smashed
- 1 teaspoon black peppercorns
- 2 bay leaves
- 1 teaspoon salt
Instructions
- Place the turkey carcass in a large pot.
- Add water, onion, carrots, celery, garlic, peppercorns, bay leaves, and salt.
- Bring to a boil over high heat.
- Reduce heat and simmer uncovered for 4-6 hours.
- Strain the stock and discard solids.
- Cool the stock before storing.
Notes
- For richer flavor, roast the vegetables before adding them to the pot.
- Stock can be frozen for up to 6 months.
