Instructions
- In a large skillet, heat the red curry paste over medium heat until fragrant.
- Add the diced turkey bacon and cook until browned.
- Pour in the coconut milk and stir to combine.
- Add the chicken ham and mixed vegetables, cooking until the veggies are tender.
- Stir in the fish sauce, lime juice, and sugar.
- Simmer for 10 minutes, then serve hot, garnished with fresh basil.
Notes
- For a vegetarian option, replace turkey bacon and chicken ham with tofu.
- Adjust the spiciness by adding more or less curry paste.
