- 1 pound chicken breast, sliced
- 2 tablespoons green curry paste
- 1 can coconut milk
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 bunch fresh basil leaves
Instructions
- Heat a large pan over medium heat and add the green curry paste.
- Add chicken slices and cook until no longer pink.
- Pour in the coconut milk and bring to a simmer.
- Add broccoli and bell peppers; cook until tender.
- Stir in fish sauce and sugar and cook for another 2 minutes.
- Stir in fresh basil just before serving.
Notes
- Adjust the spice level by adding more or less curry paste as desired.
- This dish pairs well with jasmine rice.
