- 1 cup lime juice

- Salt to taste
- 1 avocado, diced
Instructions
- In a bowl, combine shrimp and lime juice. Cover and refrigerate for 30 minutes, until shrimp is opaque.
- Add red onion, jalapeño, tomatoes, cilantro, and salt. Mix well.
- Fold in diced avocado gently before serving.
Notes
- For extra flavor, let the ceviche marinate for an additional 30 minutes.
- Serve with tortilla chips or on a bed of lettuce.
