- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 2 eggs
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda

- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/4 cup sugar (for rolling)
- 1 tsp cinnamon (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine pumpkin puree, sugar, brown sugar, and butter until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking pan and smooth the top.
- In a small bowl, mix the sugar and cinnamon for rolling.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Sprinkle the sugar-cinnamon mixture on top while still warm.
- Allow to cool before slicing into bars.
Notes
- For an extra flavor boost, add chocolate chips to the batter.
- These bars can be enjoyed warm or at room temperature.
