Instructions
- Preheat grill to medium-high heat.
- Grill corn for about 10-15 minutes, turning occasionally until charred.
- In a bowl, mix mayonnaise, lime juice, and chili powder.
- Spread the mixture over the grilled corn.
- Top with crumbled cotija cheese and turkey bacon.
- Garnish with chopped cilantro and serve.
Notes
- For a vegetarian option, omit the turkey bacon.
- Adjust the spice level by adding more or less chili powder.
