- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 28 ounces crushed tomatoes
- 6 cups beef broth
- 8 ounces lasagna noodles, broken
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot over medium heat, cook ground beef, onion, and garlic until meat is browned and onion is translucent.
- Add crushed tomatoes and beef broth, bringing to a simmer.
- Stir in broken lasagna noodles, basil, oregano, salt, and pepper.
- Cook until noodles are tender, about 10-12 minutes.
- Serve in bowls topped with ricotta and mozzarella cheese.

- This soup can be made ahead of time and reheated before serving.
- Feel free to add your own veggies such as spinach or bell peppers.
