Ingredients

  • 4 cups ripe tomatoes, quartered
  • 2 tablespoons olive oil

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup fresh basil leaves
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss tomatoes with olive oil, salt, and pepper.
  3. Spread tomatoes on a baking sheet and roast for 25-30 minutes.
  4. In a pot, sauté onions and garlic until softened.
  5. Add roasted tomatoes and chicken broth to the pot.
  6. Simmer for 15 minutes, then blend until smooth.
  7. Stir in basil and crumbled turkey bacon.
  8. Serve hot and enjoy!
