- 4 cups ripe tomatoes, quartered
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup fresh basil leaves
- 4 slices turkey bacon, cooked and crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss tomatoes with olive oil, salt, and pepper.
- Spread tomatoes on a baking sheet and roast for 25-30 minutes.
- In a pot, sauté onions and garlic until softened.
- Add roasted tomatoes and chicken broth to the pot.
- Simmer for 15 minutes, then blend until smooth.
- Stir in basil and crumbled turkey bacon.
- Serve hot and enjoy!
Notes
- For a creamier soup, add a splash of heavy cream before serving.
