Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until tender.
- Add garlic and cook for an additional minute.
- Pour in the chicken broth and add the thyme; bring to a boil.
- Add the egg noodles and cook according to package directions until tender.
- Stir in the shredded chicken and heavy cream; heat through.
- Season with salt and pepper before serving.
Notes
- For added flavor, consider adding a splash of lemon juice before serving.
- Adjust the thickness of the soup by adding more or less broth depending on your preference.
