- 2 cups egg noodles
- 1 pound chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion, carrots, and celery; sauté until softened.
- Stir in the garlic and dried thyme, cooking for an additional minute.
- Add the chicken broth and bring to a boil.
- Once boiling, add the egg noodles and cooked chicken.
- Cook until the noodles are tender, about 8-10 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!

- For added flavor, you can use homemade chicken broth.
- Feel free to add other vegetables such as peas or corn.
