- 1 pound ground turkey
- 4 slices turkey bacon
- 1 cup diced onion
- 2 cups diced potatoes
- 3 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and crumble it into pieces.
- In the same pot, brown the ground turkey until fully cooked.
- Add the onion and cook until translucent.
- Stir in the potatoes, chicken broth, garlic powder, paprika, and season with salt and pepper. Bring to a boil.
- Reduce heat and simmer for about 15 minutes or until potatoes are tender.
- Stir in the milk and cheddar cheese until melted and heated through.
- Top with crumbled turkey bacon before serving.
Notes
- For a creamier soup, substitute half-and-half for the milk.
- You can add vegetables like carrots or bell peppers for extra flavor.
