- 4 boneless, skinless chicken breasts
- 2 cups diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
- 1/2 cup mozzarella cheese, shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix diced tomatoes, basil, garlic, balsamic vinegar, and a pinch of salt.
- Place chicken breasts in a baking dish and brush with olive oil. Season with salt and pepper.
- Spoon the tomato mixture over the chicken breasts and top with mozzarella cheese.
- Bake for 25-30 minutes, until the chicken is cooked through and the cheese is melted.
- Let it rest for 5 minutes before serving.
