Instructions
- In a skillet, melt the butter over medium heat.
- Add the diced onion, garlic, and ginger; sauté until soft.
- Stir in the curry powder and garam masala, cooking for another minute.
- Add the cubed chicken and cook until browned.
- Pour in the coconut milk and stir in the tomato paste.
- Season with salt and pepper, then simmer until the chicken is cooked through.
- Serve hot over rice or with naan.
