  • 1/2 cup chocolate chips
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together grated zucchini, eggs, oil, and vanilla extract.
  3. In another bowl, combine the dry ingredients: flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

  • For added moisture, you can squeeze out excess water from the zucchini before adding it to the batter.
