- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 2 eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together grated zucchini, eggs, oil, and vanilla extract.
- In another bowl, combine the dry ingredients: flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- For added moisture, you can squeeze out excess water from the zucchini before adding it to the batter.
- These muffins can be frozen for later enjoyment!
