  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla until smooth.
  4. Combine the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the cupcake liners 2/3 full with the batter and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Let cool completely before frosting with cream cheese frosting.
  7. Decorate with red food coloring to create the brain effect.
