- 1 cup strawberries, diced
- 1/2 cup cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup butter, melted
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix the softened cream cheese with the sugar until smooth.
- In another bowl, combine the flour, baking powder, and salt.
- In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
- Gradually combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the diced strawberries gently.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Drop a small spoonful of the cream cheese mixture on top of each muffin.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For extra sweetness, consider sprinkling sugar on top before baking.
- These muffins are best enjoyed fresh but can be stored for a few days.
