- 2 cucumbers

Instructions
- Wash and slice the cucumbers and bell peppers into bite-sized pieces.
- In a large bowl, combine the cucumbers and bell peppers.
- In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the vegetables and toss to combine.
- Sprinkle chopped parsley on top before serving.
