- 1 pound fresh mushrooms, sliced
- 1 onion chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In the crockpot, combine the mushrooms, onion, garlic, and vegetable broth.
- Cover and cook on low for 6-8 hours.
- Once cooked, use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, butter, thyme, salt, and pepper. Cook for an additional 30 minutes.
Notes
- For a thicker soup, reduce the amount of broth.
- Add some croutons on top for extra texture.
