- 1 pound chicken breast
- 4 cups chicken broth
- 2 cups egg noodles
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- Salt and pepper to taste
Instructions
- Place the chicken breast in the crockpot.
- Add the chicken broth, carrots, celery, onion, garlic, thyme, and bay leaf.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove the chicken and shred it, then return it to the crockpot.
- Add the egg noodles and cook for an additional 20-30 minutes until noodles are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a creamier soup, add a splash of heavy cream before serving.
- Feel free to add your favorite herbs or veggies.
