Instructions
- In the crockpot, combine the chicken broth and onion soup mix, mixing well.
- Add the chicken thighs to the mixture, ensuring they are submerged.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Once the chicken is cooked, remove it and shred it.
- In a small bowl, mix cornstarch and water to create a slurry.
- Add the slurry to the crockpot, stir, and cook for an additional 30 minutes on high to thicken the gravy.
- Return the shredded chicken to the crockpot, mix, and serve.

- Serve the chicken and gravy over rice or mashed potatoes for a complete meal.
