- 4 cups diced potatoes
- 1 cup cooked ham, diced
- 1/2 cup turkey bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- salt and pepper to taste
Instructions
- In the crock pot, combine the diced potatoes, ham, turkey bacon, onion, and garlic.
- Add the chicken broth and thyme, then stir well.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Stir in the heavy cream during the last 30 minutes of cooking.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables like carrots or celery for extra flavor.
- For a thicker soup, you can mash some of the potatoes before adding the cream.
