- 1 pound chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chopped spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crock pot.
- Add chicken broth, onion, garlic, and Italian seasoning to the pot.
- Cover and cook on low for 6-7 hours, or until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Stir in the heavy cream and Parmesan cheese.
- Add spinach and cook for an additional 30 minutes.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, use a cornstarch slurry.
- Serve with crusty bread for a complete meal.
