Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- Place the beef in the slow cooker.
- Add the carrots, potatoes, onion, and garlic on top of the beef.
- In a bowl, mix the beef broth, thyme, rosemary, tomato paste, Worcestershire sauce, salt, and pepper.
- Pour the broth mixture over the ingredients in the slow cooker.
- Cover and cook on low for 8 hours or until the beef is tender.
Notes
- For a thicker stew, you can add a cornstarch slurry in the last hour of cooking.
- Feel free to add in other vegetables like peas or green beans.
