- 2 medium zucchini

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchini into bite-sized pieces.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- In another bowl, whisk the eggs.
- Dip each zucchini piece into the egg, then into the breadcrumb mixture.
- Place the zucchini bites on a baking sheet lined with parchment paper.
- Bake for 25 minutes or until golden and crispy.
- Serve warm with your favorite dipping sauce.

- For extra crunch, broil for a few minutes after baking.
