- 1 can chickpeas, drained and rinsed
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup breadcrumbs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, mash the chickpeas with a fork until mostly smooth.
- Add the mixed vegetables, breadcrumbs, olive oil, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into small nuggets and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Serve warm with your favorite dipping sauce.
