- 1 pound salmon fillet
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 2 cups cooked rice
- 1 cup mixed greens
- 1 avocado, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the salmon into bite-sized pieces.
- In a bowl, mix the mayonnaise, sriracha, and honey together.
- Coat the salmon bites in the sauce, then roll them in panko breadcrumbs.
- Place the salmon bites on a baking sheet and bake for 12-15 minutes.
- Serve the salmon bites over cooked rice with mixed greens and avocado slices.
Notes
- For extra heat, add more sriracha to the sauce.
- Use different types of fish if desired.
