- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis into rounds.
- In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini slice in the egg and then coat it in the breadcrumb mixture.
- Place the coated zucchini on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
Notes
- For extra crunch, broil the zucchini for the last 2-3 minutes.
- Feel free to add spices or herbs of your choice to the breadcrumb mixture.
