Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried basil
- 1/2 teaspoon sugar
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add diced tomatoes and vegetable broth, bring to a boil.
- Reduce heat, stir in heavy cream, salt, pepper, basil, and sugar.
- Simmer for 20 minutes, then blend until smooth.
- Serve hot with crusty bread.
Notes
- Best served fresh, but can be stored in the refrigerator for up to 3 days.
- Can be frozen for up to 2 months.
