Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat and sauté onion and garlic until fragrant.
  4. Add mushrooms and cook until browned, then stir in spinach and cook until wilted.
  5. Mix in cream cheese and Parmesan until melted and well combined.
  6. Slice open baked sweet potatoes and fill with the mushroom and spinach mixture.
  7. Serve warm and enjoy!
