- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until fragrant.
- Add mushrooms and cook until browned, then stir in spinach and cook until wilted.
- Mix in cream cheese and Parmesan until melted and well combined.
- Slice open baked sweet potatoes and fill with the mushroom and spinach mixture.
- Serve warm and enjoy!
