- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 medium onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides, then remove from the pot.
- Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent.
- Pour in the beef broth and diced tomatoes, bringing the mixture to a boil.
- Reduce heat and return the meatballs to the pot, cooking for about 15 minutes.
- Stir in the heavy cream and spinach, cooking until the spinach wilts.
- Season with additional salt and pepper if needed. Serve hot.

- For extra flavor, add a splash of red wine to the broth.
- You can substitute ground turkey or chicken for a lighter option.
