Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides, then remove from the pot.
  3. Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent.
  4. Pour in the beef broth and diced tomatoes, bringing the mixture to a boil.
  5. Reduce heat and return the meatballs to the pot, cooking for about 15 minutes.
  6. Stir in the heavy cream and spinach, cooking until the spinach wilts.
  7. Season with additional salt and pepper if needed. Serve hot.

Notes

  • For extra flavor, add a splash of red wine to the broth.
  • You can substitute ground turkey or chicken for a lighter option.
