- 4 cups diced potatoes
- 1 cup cream cheese
- 6 slices turkey bacon, cooked and crumbled
- 4 cups chicken broth
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh chives, chopped
Instructions
- In a large pot, combine chicken broth, diced potatoes, onion, and garlic. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add cream cheese, bacon, salt, and pepper. Stir until cream cheese is fully melted.
- Using an immersion blender, blend the soup until smooth.
- Serve hot, topped with cheddar cheese and chives.
Notes
- For a spicier version, add crushed red pepper flakes.
- Leftovers can be frozen for up to 3 months.
