Instructions

  1. In a saucepan, heat the heavy cream until it begins to simmer.
  2. Remove from heat and add in the white chocolate chips, stirring until melted and smooth.
  3. Stir in the chopped cranberries, pistachios, and vanilla extract.
  4. Refrigerate the mixture for about 2 hours until firm.
  5. Once firm, scoop out small amounts and roll them into balls.
  6. Roll the truffles in cocoa powder to coat.
  7. Refrigerate again until ready to serve.
