Ingredients

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 cup vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon sugar
- 1/2 cup heavy cream
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and cook until translucent.
- Add minced garlic and cook for another minute.
- Stir in the crushed tomatoes, vegetable broth, basil, and sugar. Bring to a simmer.
- Reduce heat and let it simmer for 20 minutes, stirring occasionally.
- Remove from heat and blend the soup until smooth.
- Return the pot to the stove, stir in heavy cream, and heat through.
- Serve hot and enjoy!

- For extra flavor, add fresh basil leaves before serving.
- This soup pairs well with grilled cheese sandwiches.
