- 4 cups diced potatoes
- 1 cup chopped turkey bacon
- 1 onion diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup chopped green onions
- 2 tablespoons butter
- salt to taste
- pepper to taste
Instructions
- In a large pot, melt the butter over medium heat and sauté the onions and turkey bacon until onions are translucent.
- Add the diced potatoes and chicken broth, then bring the mixture to a boil.
- Reduce heat and let simmer until potatoes are tender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Use an immersion blender to blend until smooth, or leave some chunks for texture.
- Serve hot, garnished with chopped green onions.

- This soup can be made ahead of time and reheated.
- Feel free to add other vegetables like kale for more nutrition.
