Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 onion diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup chopped green onions
  • 2 tablespoons butter
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the onions and turkey bacon until onions are translucent.
  2. Add the diced potatoes and chicken broth, then bring the mixture to a boil.
  3. Reduce heat and let simmer until potatoes are tender.
  4. Stir in the heavy cream and season with salt and pepper to taste.
  5. Use an immersion blender to blend until smooth, or leave some chunks for texture.
  6. Serve hot, garnished with chopped green onions.
