- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef and brown on all sides.
- Stir in the onion and garlic, cooking until softened.
- Add the carrots, potatoes, thyme, bay leaves, salt, and pepper.
- Pour in the beef broth and tomato paste, stirring to combine.
- Bring to a boil, then reduce heat and simmer for 2 hours until the beef is tender.
- Remove bay leaves before serving.
Notes
- Feel free to add other vegetables like mushrooms or peas for extra flavor.
- For a thicker stew, mix a tablespoon of cornstarch with water and add it during the last 30 minutes of cooking.
