- 2 large eggplants, sliced
- 4 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup all-purpose flour
- 3 eggs, beaten
- 2 cups breadcrumbs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F.
- Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each slice of eggplant in flour, dip in eggs, then coat with breadcrumbs.
- Heat olive oil in a large skillet and fry the eggplant slices until golden brown on both sides.
- In a baking dish, layer marinara sauce, eggplant, mozzarella, and Parmesan.
- Repeat layers until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
Notes
- To make it gluten-free, use gluten-free breadcrumbs and flour.
- For extra flavor, add fresh herbs like basil or oregano to the marinara sauce.
