Classic Eggplant Parmesan: Easy, Indulgent Comfort Food Delight

Ingredients

  • 2 large eggplants, sliced
  • 4 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 eggs, beaten
  • 2 cups breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  5. Dredge each slice of eggplant in flour, dip in eggs, then coat with breadcrumbs.
  6. Heat olive oil in a large skillet and fry the eggplant slices until golden brown on both sides.
  7. In a baking dish, layer marinara sauce, eggplant, mozzarella, and Parmesan.
  8. Repeat layers until all ingredients are used, finishing with cheese on top.
  9. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.

Notes

  • To make it gluten-free, use gluten-free breadcrumbs and flour.
  • For extra flavor, add fresh herbs like basil or oregano to the marinara sauce.
