- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- 1 cup fresh raspberries
- 1/2 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup water
Instructions
- Prepare the chocolate mousse by melting the chocolate over a double boiler.
- Whip the cream and fold into the melted chocolate along with the raspberries.
- In a separate bowl, beat the eggs with sugar until fluffy, then add the vanilla and salt.
- Combine the mixtures and refrigerate for setting.
- To make the glaze, heat water with additional chocolate until smooth.
- Pour the glaze over the chilled mousse cake and let it set before serving.

- Use quality dark chocolate for the best flavor.
- Fresh raspberries can be substituted with frozen if necessary.
